Spiced Maple Bacon Pancakes

These salty and sweet pancakes are always a huge hit! You can use either the Artisan Pumpkin Spice or Artisan Winter Spice for the warming spice flavour.


Ingredients:

  • Bacon (as much as you want/need)

  • Maple syrup

  • 250g self-raising flour

  • 1 tsp baking powder

  • 1 tbsp sugar

  • 1 tsp Artisan Spice Blend

  • 200ml milk

  • 3 large eggs

  • 25g butter

  • Knob of butter


Method:

Put the oven on at 200C fan. Get a baking tray and cover it in tinfoil and put a rack on top. Lay the bacon out and brush on some maple syrup. Put in oven for 10 mins. Then take out, turn over, brush a little more syrup on and back in for 5 mins. Take out once the time is up or when they are cooked to your liking. Alternatively, cook in a frying pan.


In a bowl put 250g self raising flour, 1 teaspoon of baking powder, 1 tablespoon of sugar, 1 teaspoon of Artisan Spice Blend.


In a measuring jug put 200ml milk and 3 large eggs and beat well. Melt and slowly add 25g butter to the jug.


Slowly using an electric mixer add the liquid to the flour mix. Mix until smooth. If the batter seems overly thick, add some milk.


In a large frying pan melt a knob of butter. Using a ladle add the batter in a line, add a slice of bacon and dribble a little more batter over the bacon so it's wrapped up.


Cook on both sides, add maple syrup once cooked and serve!
