2 small onions
175g red lentils
800ml vegetable stock
1/2 tsp of Pumpkin Spice Blend
Pinch of chilli flakes
Milk (as much as you need to get to desired consistency)
Get two small onions, chop and saute. Add 350g carrots, peeled and sliced, and 175gm red lentils. Mix these together.
Then add about 800ml vegetable stock, half heaped teaspoon of pumpkin spice mix, pinch of chilli flakes and pepper. Cook on smooth setting in soup maker or simmer for about 20 mins and blend till smooth .
Then add milk to thin to desired consistency (good for the bones!) . Serve with swirl of yoghurt and parsley.
The pumpkin spice adds warmth and depth to the taste..just yummy and very moreish!
