Pumpkin Spice carrot and apple muffins

So quick and easy to assemble and bake.


Made with everyday ingredients but they taste incredible with the addition of Partie de Moi Pumpkin Spice.


A simple, relatively healthy bake that's perfect with coffee, for lunch boxes or for weekends out and about.


Ingredients:


150 g flour

75 g oats

75 g butter

75 g sugar

2 eggs

250 g grated apple

70–80 g grated carrot

2 tsp baking powder

1½ tsp Pumpkin Spice

¼ tsp salt


Method:


  1. Heat oven to 180°C fan / 200°C conventional. Line a muffin tin.

  2. Cream the soft butter and sugar together until smooth.

  3. Beat in the eggs, one at a time. Add vanilla if using.

  4. Stir in the grated apple and carrot. Do not squeeze the apple.

  5. In a separate bowl, mix the flour, oats, baking powder, Pumpkin Spice and salt.

  6. Fold the dry ingredients into the wet until just combined.

  7. Divide between muffin cases.

  8. Bake for 22–25 minutes, until risen and a skewer comes out clean.
