A fun and simple recipe to do with the little pumpkins!
110g caster sugar
110g self-raising flour
1 tsp baking powder
2 large free range eggs
1 tsp vanilla extract
1 tsp of either spice blend
225g icing sugar
Dash of vanilla extract
Pu the oven on at 160C.
Beat together 110g of caster sugar and 110g of butter until pale and fluffy.
Mix in 110g self-raising flour, 1 teaspoon baking powder, 2 large free range eggs, 1 teaspoon vanilla extract and 1 teaspoon of artisan spice blend of your choice.
Spoon into cupcake/muffin cases and bake until a skewer comes out clean.
For the frosting beat 225g icing sugar, 100g butter, dash of vanilla extract and you could again add the spices at this stage for that extra depth.
