Tasty recipe for using up overripe bananas.
285g plain flour
1 teaspoon bicarbonate of soda
1 TSP salt
1 TBSP Artisan Pumpkin Spice or Artisan Winter Spice
1 TSP vanilla extract
85ml buttermilk or 1.5 TSP lemon juice or vinegar in 85ml milk
Tub or mascapone
Small mug of icing sugar
Another heaped TSP Artisan Spiced Pumpkin Blend
Put at oven 180C.
Sift 285g of plain flour, 1tsp bicarbonate of soda, 1/2 TSP salt into a small mixing bowl. Add 1tbsp of Artisan Pumpkin Spice Blend.
In large mixing bowl cream 110g butter and 200g sugar until light and fluffy.
With a stick blender in another bowl blend up 2 eggs, 4 bananas, 1tsp vanilla extract, 85ml buttermilk (you can make this at home but adding 1.5 TSP either lemon juice or vinegar to the milk)
Add egg mixture to the butter and sugar. Mix well.
Fold the dry ingredients into the wet.
You can either make muffins, cupcakes or use a sheet pan. Just make sure whatever container you are baking mixture in only fills 2/3 of the way up as this rises. Bake until toothpick comes out clean.
You can also make mascarpone frosting. Get a tub of mascarpone, small mug of icing sugar and heaped teaspoon of Artisan Pumpkin Spice Blend. Mix up and slather on!
